From the Juice of Grapes to Wine

For millennia, wine has been made from only two incredients.  They are grape juice and yeast.  Any fruit juice can be used, as a matter of fact, but grape juice is the most popular.
We tend to think of wine as a special treat, a gracious gift (as in a wine gift basket), a beverage of celebration or a drink to serve with a special meal.  For much of history, though, it was a drink of necessity due to the often poor standards of the available water.

Yeast is the magical ingredient that turns grape juice into wine. Interestingly enough, there is actually wild yeast spores in the air and all that is really needed to make wine is an open container of grape juice and time. The result however, would probably not be the most palatable of beverages.

There are numerous strains of yeasts and the types used to make wine have been cultured just for this purpose. The strain of the yeast has an impact upon the wine’s eventual flavor.  Well anyway, yeast is a living organism that feeds off of sugars in the grape juice in a process called fermentation.  It is the fermentation that causes the sugars in the grape juice to turn into alcohol.

Once all of the fermentable sugars have been consumed, the yeast will fall to the bottom of the container. The wine is removed from the container, leaving the yeast, and is trasferred to another container to mature while waiting to be bottled.

How does wine get its color?

You probably know that there are green grapes and black grapes and different grapes are used to make different wines.  The color of the wine, however, does not directly reflect the color of the grape.  In fact, grape juice is largely clear no matter the color of the original grape.  The color of wine is determined by whether (and for how long) the skin is allowed to remain in the juice during the fermentation process.

What gives each wine its taste?

Even though there are very few ingredients, there are many things which influence the taste of wine. First of all, there are many varieties of grapes. Each grape variety will produce different flavors, aromas, and even textures.  In addition, the soil and climate where the grapes are grown drastically affect these variables.  Not only that, but the wine maker can control various things by the technique, temperature and yeast used during fermentation. Other variables such as fermenting or storing in oak barrels will also affect the taste.

Never fear, with all of these factors considered even the most avid wine drinker would ever be able to experience all of the different varieties of wine on the market today. Let the treasure hunting begin!

Tannin is a substance in wine that causes a firm, mouth-drying feeling in your mouth. It is extracted from the skins, seeds and stems of the grapes so red wines will contain more tannin than whites.  White wines will get a degree of tannin when oak barrels are used for fermentation or aging. Eat just the skins of grapes or drink strongly brewed, unsweetened tea for a good idea of what tannin feels like in your mouth.

A Bachelor’s Perfect Present

We all have a friend who is completely helpless in the kitchen.  Actually, if you don’t have a friend like that, read on, because I have enough friends who meet that description to share at least one of mine with you.

The gift recommendation that I’m about to offer for him is rather expensive, so be prepared.  I promise you, though, that you will discover it’s a very good investment on your part.  Perhaps that nameless man is your roommate, your cousin or even your own son who you can seem to get to move out of your house.

Give the gift of a romantic dinner with the person of his own choice–right there in his home.  When you get right down to it, nothing impresses an unsuspecting date more than an intimate dinner that the host has prepared himself (with your encouragement, of course.  I really do have a particular friend in mind as I write this, and he needs all the help that I can give him, and I’m sure your similar friend does, too.  You may need to be very specific when you give him your gift and the instructions to go with it.  Remind him to light candles, choose the music for him and suggest he pick up his dirty socks.

Start with a gift of a selection of gourmet cheeses for the beginning course  If he is capable of slicing a couple pears or apples, suggest that as well.  He can serve this course as a finger food or at the dining table as the formal beginning of the meal.

For the entree, present him with a certificate for a delicious gourmet dinner of lobster a different seafood dinner or perhaps a combination of steak and lobster, sometimes known as surf and turf.  As noted, this guy needs plenty of help, so the fresher the lobster the better.

Tell him to cap off the evening with a magnificent, turtle cheesecake.  Or, if he does not like chocolate, then select the more traditional New York cheesecake, decorated with a sprig of fresh mint.

You might also recommend a fine wine, if he consumes alcoholic beverages.  Lobster is sufficiently robust that it is perfectly safe to offer a bold wine.  He might consider a Burgundy or Merlot, although if he is not very adventurous, then perhaps a Chardonnay would be better for him.

Once you’ve done your part in the affair, relax until you receive the engagement announcement.  If it doesn’t arrive within six months, just find another friend.  That will be much easier.

Although they are most popular in some European countries where sliced cheese on bread is a common fare, many styles have gained momentum in the United States as well.

Crescent Pie Recipe of Beef & Cheese

You will need

2 cups of shredded cheddar cheese
600 grams of ground beef
1 cup of refrigerated rolls
1 cup of tomato sauce
1 paprika
1/4 teaspoon of garlic salt
1/4 teaspoon of salt
1 slightly beaten egg
1/3 cup of green pepper (chopped)
1 cup of green beans (drained)
1/3 cup onion (chopped)

Instructions

Set the oven at 190 degree C.

Cook the beef until brown in a large frying pan with green pepper and onion, and then drain.

Include beans, tomato sauce, salt and garlic salt, and then mix. Allow to simmer as the crust is prepared.

Cut crescent dough to eight triangular shapes.

Put the triangles in a 9-inch ungreased pie pan, and then form crust by pressing over the bottom and up sides.

Add and spread the slightly beaten egg and 1 cup of cheese on the crust.

Using a spoon, insert the hot mixture of meat into the crust.

Use the rest of cheese and paprika to sprinkle over.

Place in the preheated oven until golden brown for 20 to 25 minutes.

Serves 5
