Delicious Strawberry Cheesecake

There’s few things that can match a delicious cheesecake as the end of a good meal. Here’s a great recipe I’d like to share with you. It’s a baked strawberry cheescake from page 13 of my cookbook 91 Cheesecake Recipes.

Crust
1 1/2 cups graham cracker crumbs
2 T sugar
2 Tbsp melted butter

Filling
20 oz (2-1/2 pkgs – 8 oz each) cream cheese, softened
1 c sugar
1/2 tsp vanilla
3 eggs, beaten

Topping
1 cup mashed strawberries
1 cup sugar
3 Tbsp cornstarch
1/3 cup water

Mix cracker crumbs with sugar and melted butter. Press the mixture onto the bottom of a 9″ springform pan. Bake in a preheated oven at 350° for 10 minutes. Remove from oven and let cool on a wire rack.

Whip the cream cheese until smooth using electrical mixer or food processor. Beat in the sugar gradually. Add beaten eggs and vanilla. Pour over the pre-baked graham craker crust in the springform pan.

Bake at 300° for one hour or until the center is set. Remove it from the oven and let it cool on a wire rack.

Strawberry Glace

Blend the cornstarch and sugar together in a small sauce pan. Stir in the water and strawberries, cook on medium heat, constantly stirring, until it thickens and begins to boil. Let boil one minute, stirring constantly. When the glace has cooled completely spread it on the cool cheesecake.

Refrigerate for a minimum of 3 hours before serving.

How To Make Great Cheesecake

Here’s some additional tips you can use to make your cheesecake a success:

To soften cream cheese means to leave it in room temperature to let it get softer than refrigerated. It’s all right to let it reach room temperature as long as you don’t leave it out for too long.

You can prevent a cheesecake from cracking by running a thin knife around the edge, between the crust and the pan, just after removing the cake from the oven.

If you use a springform pan, don’t remove the sides of the pan before the cake has cooled completely. Refrigerate before serving.

When you slice cheesecake with a knife, the knife should have a long and thin blade to make clean cuts. Remember to dip the knife in warm water and clean the blade between each slice. This way the slices gets cut nice and clean without crushing the cake.

 

It’s A Snap To Bake A Turtle Cheesecake

The turtle cheesecake is a unique type of dessert that is a mix of pecans, caramel candies and chocolate. It is a popular type of dessert that is enjoyable and is easy to make.

Before you can get your cheesecake heated up you will need to get your cream cheese to be mixed. You will also need to add chocolate chips to your recipe. You will need to get the cream cheese ready first. You should use twenty-four ounces of the cream cheese for the recipe. After this you will need to use a half cup of white sugar along with three half teaspoons of vanilla extract.

Two eggs should then be added. The entire mixture should be mixed up to where it is smooth. Half a cup of chocolate chips will then need to be melted and mixed into the mixture.

Finally you can get the turtle cheesecake to be cooked in an oven. It will need to stay in an oven heated at 350 degrees for forty minutes. After you take it out you will need to keep it in a refrigerator overnight.

Turtle Cheesecake: The Mark of a Grown Up

My childhood was a little odd compared to most other children.  I didn’t sneak sweets.  I actually ate only meat, fruit and even some spinach and green beans.  I suspect that many of you mothers and fathers might be wishing that you had an ideal child like I was.  My preferences might have been tied to the fact that my mother kept me on baby foods until I was twenty-eight.  In retrospect, I realize that none of the [major babyinfant] food companies squeeze a pureed slice of a fudge brownie into a small glass jar.

I also ate very little candy.  After I would come home from trick or treating every Halloween night, my mother would make me dump my goodies on the floor, where we would both seat ourselves, cross-legged.  We would sort them into three piles.  Into one of those piles would go everything that was made by the generous Mrs. Robertson.  Those went straight into the garbage, because Mom was sure that Mrs. Robertson let her fourteen cats walk all over the kitchen counters.  The pile next to the toxic contributions of Mrs. Robertson was made up of any apples and small boxes of raisins that I had been given.  The apples were always provided by the two dentists who lived in our neighborhood.  That was the pile I ended the night consuming.  I can’t say for certain what happened to the third grouping–the one that contained all the candy, the caramel apples and the popcorn balls.  As soon as the sorting was finished, my mom hastily took those into my parent’s bedroom.  They never again appeared.  The only time I ever was allowed to have candy was when I visited one pair of grandparents.  (My other grandparents only tried to give me buttermilk.  I resent cows to this day.)

In defense of my mother, I believe that this sort of behavior is taught in the top secret motherhood school.  I know this because my wife exhibited the same behavior with our son on Halloween that my mother employed.  That was typically followed by a couple weeks of repeated, “Do I look fat to you?”  It didn’t take me long to realize that such a question demands a very rapid response; one should not even pause for a breath.

At twenty-nine, just as I was beginning to learn that meat, vegetables and applesauce do not have identical textures in their natural states, I discovered dessert in the form of a gourmet cheesecake.  Actually, I now know that the word gourmet is rarely applied to anything that comes from the discount grocery store in an ugly box with a small cellophane peep hold.  The cheesecake turned out to be mostly chemicals–delicious chemicals.  Remember that my taste buds had been accustomed to the miracle recipes of the baby food makers.  To me, the cheesecake was the definition of heaven.

Some years later, as I went through my gastronomical adolescence, my recreational use of foods helped me to realize that cheesecake didn’t really taste like cardboard, as my first experience had led me to believe.  In addition, I discovered that cheesecake, the wonder food, actually comes in lots of different flavors.

Dessert is now my reason for living! The best way to top off a well balanced meal of two jars of meat, three jars of thoroughly squashed squash and a banana is with a slice of turtle cheesecake.  Don’t allow this news to leak to my mother, though; she’ll just take it to her bedroom.

Unfortunately, I don’t have the foggiest notion of how to go about actually making a cheesecake.  If you have a recipe for one that doesn’t involve using either a mixer or an oven, please let me know.  I do know how to use a blender, though, because I watched my mom prepare the Thanksgiving turkey one year.

Delicious Dessert Recipes, Anyone? It’s On The Taste Buds Of The Diner!

You’d probably get very few definitions and plenty of specific dessert names if you were to ask a group of 100 people for their definition of a delicious dessert recipe. Probably, you may say that the most delicious dessert in the world is chocolate cheesecake. But then you still got lemon meringue pie, apple pie, ice cream cakes and a lot more. You can truly write a small dictionary of delicious dessert recipes.

Every family has a little stash of recipes, handed down from generation to generation. Every family claims there’s nothing quite like their own secret family treasure, particularly when it comes to tasty dessert recipes. It may well be that just a teaspoon of this or that ingredient can make that lemon meringue pie recipe unique and your family just wouldn’t have it any other way.

My mother had her own little stash of brilliant dessert recipe cards, which she kept for a long time and most were handed down from her mom and aunts. The three of my favorite and most delicious dessert recipes are still with me. First is the fresh strawberry pie, a summer delight. Second is my grandmother’s secret lemon meringue pie. And the third is grandma’s famous Norwegian butter cookies.

Now these are the benchmarks against which I measure any other dessert. Although these delicious dessert recipes must be duplicated – almost – in millions of other households, even Marie Callendar’s pies don’t measure up to those pies. As for my Grandma’s cookies, well, they are like a little visit to Heaven on a plate.

The fresh strawberry pie had me closing my eyes, savoring the sweet delights of a mouthful of fresh strawberries, whipped cream and a flaky pastry I have yet to master. When it was strawberry season, my Grandma and Mom and all of us kids would pile into Grandma’s car and drive from San Francisco to Gilroy to buy strawberries from the farm stand vendors.

Maybe what made that delicious dessert recipe an all-time favorite, to this day, is the fact that it took all day to procure the ingredients, or maybe it was the intoxicatingly fresh smell of thousands of fresh strawberries.

The lemon meringue pie made with fresh lemon and lemon zest is very lemony. The graham cracker crust added to its perfection.

As for those Norwegian butter cookies, there must be some Norwegian secret. No matter how I try to duplicate the plain butter cookie, with its ever so delicately browned edges, I cannot. I think you must have to be born in Norway or something. (She produced a similarly delicate and perfect pancake.)
