Chocolate Chip Cookies – A Great Family Tradition
There are many traditions that every family has that make them unique. Through my years of working with families through a social services agency I came to realize that no matter how dysfunctional a family is there are still some sorts of traditions that bond them together. My husband’s family is quite close. Most of their traditions involve hunting, fishing and food.
My husband had three brothers and a sister. The brothers get together several times a year to go fishing and hunting. These hunting and fishing trips always involve meals and snacks.

Throughout the years, they each settled on a favorite that they want to repeat each year. My sister-in-law bakes coffee cake that they want to have with them for each trip and I bake chili and chocolate chip cookies. As for the chili, they always want it with extra spice and loaded with several kinds of beans.
The chocolate chip cookies are loaded with oatmeal, shelled sunflower nuts, peanut butter chips and of course chocolate pieces. I have tried different recipes over the years, and I always throw something new into the mix, but I finally found a combination that they love and request for each outing.
The chocolate chip cookies taste more than just good. For the additional fiber that your body needs, they contain oatmeal and nuts, plus the peanut butter and the chocolate chips provide energy. I also experimented a bit on some ingredients in the chocolate chip cookies like using shortening, oil, or butter.
I have found that the oil produces a harder crunchy cookie, the butter cookies are very soft the blend of half butter and half solid shortening produces a cookie that packs well and remains soft. I have also experimented with the oatmeal. I use quick cooking oatmeal in which I process half of the amount used in the chocolate chip cookies in the food processor so that it has a finer texture.
This allows the cookie to become moister. Adding shelled sunflower seeds adds to the saltiness and it goes well with the sweet taste of the chocolate.
Several times a year I make huge batches of the chocolate chip cookies I bake some of them and freeze the rest of the dough in an ice cream pail. This way there are fresh cookies readily available for the planned or impromptu fishing or hunting trip.
It feels great that I have added a touch to the great family tradition. Whenever my husband smells chili simmering or cookies baking, he always starts talking about hunting and fishing stories.

My mother’s brownie recipe remains one of my favourites; I remember her spooning cocoa out of the can into a metal tablespoon, levelling it off with a knife, and reaching back into the cocoa can for another scoop-9 scoops in all.
Sometimes mom iced the brownies with thick, creamy, chocolate icing, or with chocolate icing with a few drops of peppermint flavouring added to the buttery mixture, but often she didn’t ice them at all-she simply sprinkled a dusting of confectioner’s sugar (icing sugar) over them. For a special effect mom would cover the squares with a paper doily before dusting them with the sifted sugar; when she lifted the doily a lacy design was revealed, transforming the brownies into edible works of art.
The first thing you want to do is measure your dowels. To do this you will need to insert one dowel into your bottom cake tier and mark where the cake top ends. Pull the dowel out and use it to measure the remainder of your dowels. You generally want five or six dowels per tier. Cut all of your dowels with a sharp knife or scissors. If using wood, make sure to get a clean cut to avoid getting wood splinters in your cake. I prefer the plastic dowels. They are much easier to cut and you don’t have to worry about the wood splinters. Plastic dowels can even be reused for the most part. Wilton makes excellent plastic dowels and you can find them at your local craft store in the baking aisle.
Mom’s Brownies
9 Tbsp. cocoa
5 Tbsp. butter
1 ½ cups white sugar
¼ tsp. salt
2 eggs
¾ cup milk
1 ½ cups flour
1 tsp. baking powder
Directions
Cream butter and sugar. Add eggs and beat well. Add remaining ingredients. Pour into 8″ x 8″ greased pan. Bake in 350° F oven until done, approximately 20-30 minutes. Enjoy.
To stack your top tier, place a dollop of buttercream frosting or royal icing in the center of the bottom tier. Using a spatula on one side and your hand on the other, lift your top tier and place it on top of the bottom tier starting with the side you are lifting with your hand. Slowly lower the top tier with your spatula and then remove the spatula when you lower your cake

The combination is extremely tasty! In fact, that makes me picture a bowl of butterscotch ice cream in front of me right now mixed with peanut butter and topped with chocolate syrup. Yum! That gives me another idea for more great recipes for kids to write about in the future.
Chocolate peanut butter no bake cookies are easy to make and don’t require many ingredients. The kids can help you by measuring the ingredients, mixing the uncooked dough and dropping it by spoonfuls onto the baking sheet.They’ll think they’re chefs!
Store the cookies in the fridge inside a plastic container and layer the cookies between sheets of wax paper. Upon delivery place them in a decorative tin box, you could even wrap it and include a gift message. Have your son bring a smile to grandma’s face with a box of these decadent cookies topped with a ribbon tied around it and a message inside like, “Hope your heart is filled with joy today just like this tin is filled with these delicious cookies I made for you. I’m thinking about you grandma!” Your daughter could deliver a gift wrapped tin box to her third grade teacher with a message such as, “You’ve helped me get good grades. Pineapple Sorbet
2 tbsp water; 3 tsp gelatin; 225g can pineapple in natural juice, chopped; 3 tbsp fresh orange juice; ground ginger
Put the water in to a heatproof container, sprinkle in the gelatin and leave to soften. Stand the container in a pan of hot water and stir until the gelatin dissolves. Add the gelatin to the canned pineapple and juice and the orange juice. Process in a blender, then pour into a 550ml mould and leave to set in a freezer. Serve sprinkled with ginger.
Yogurt Orange Ice
150g natural yogurt; 200ml unsweetened orange juice; vanilla essence; orange food coloring
Mix together the yogurt, orange juice and a few drops of vanilla essence and food coloring. Put into a suitable container in a freezer and leave until partially frozen. Beat well, then freeze until firm. Serve with slices of fresh orange.
Orange Sorbet
1 tbsp fructose; 425ml boiling water; 175ml frozen concentrated orange juice, thawed; 2 egg whites
Dissolve the fructose in the boiling water. Add the concentrated orange juice, and mix well. Put in a suitable container in a freezer and remove when on the point of setting. Beat well. Whisk the egg whites until stiff and fold into the iced mixture, then freeze until firm.
Pineapple Boats
1 medium pineapple; 150g natural yoghurt; liquid sweetener
Cut the pineapple in half length ways, scoop out and dice the flesh. Retaining a few pieces to use as decoration, put the pineapple in a suitable container in a freezer, and leave until almost frozen. Remove from the freezer and mix with the yogurt and liquid sweetener. Use to fill the pineapple shells and decorate with the reserved pineapple pieces. Serve immediately.
Strawberry Ice
3 tbsp water; 3 tsp gelatin; 175g strawberries, hulled; 150g natural yogurt; liquid sweetener
Put the water in a heatproof container, sprinkle in the gelatin and leave to soften. Stand the container in a pan of hot water and stir until the gelatin dissolves. Leave to cool, then add the strawberries, yogurt and liquid sweetener. Sieve or process in a blender. Pour into a suitable container and leave in a freezer until solid

Would you like an idea for a fun activity to share with your kids? How about an activity that will teach them some valuable skills? Bake a delicious treat with your kids. Kids love to eat desserts and making them is a similar activity to making crafts except crafts don’t taste good? There is a number of sweets from which to choose, but today we will focus on a unique treat that the kids will a lot of fun making and eating: candy sushi.
It certainly does look like real sushi and that’s what your kids will like the most: they get to feel like they’re actual sushi chefs. Just like playing “house” they can pretend to make actual sushi rolls. They’ll want to take the candy sushi to their teachers. They’ll want to promote their homemade treat to grandma and grandpa. They’ll call their friends, cousins, aunts and uncles to announce to the world that they made homemade candy. This will start a string of other desserts they’ll want to make with mom or dad, giving you more fun things to do with your kids.
What is candy sushi?
It’s a concoction of crisped rice cereal that represents the real rice, gummy worms (you could also add red string licorice) to represent the fish, and the rolls wrapped in fruit leather which represents seaweed. It is the candy equivalent of makizushi rolls.
How do you make candy sushi?
The technique of making candy sushi is not complex. There are only the few ingredients previously mentioned and no baking involved. There’s just a little prep work involved, mixing melted butter and marshmallows with crisped rice, pressing and rolling the mix, adding some gummy worms, cutting the mix into rolled pieces and then wrapping them in fruit leather. Sushi candy rolls have a pretty presentation, tasty delicious and above all, are fun for the kids to create!
Don’t refrigerate them for too long or the gummy worms and fruit leather will begin to harden and lose flavor. Give them away as candy gifts or eat them yourself. You can choose a decorative Japanese plate on which to place them. And for added taste set aside some chocolate dipping sauce to represent soy sauce. If you wish to eat them for yourselves, then take a make-believe visit to a sushi bar.

A Recipe for Cake Using Chocolate and Zucchini (Courgette)

An Unusual Cake Recipe Using Chocolate and Zucchini
You Will Need:
1/2 C. to 1 C. chocolate chips
three zucchini, approximately 6″ in length, cut into shreds (approximately 2 cps)
1 teaspoon ground cinnamon
two 1/2 C. flour
three eggs
1/2 C. butter
1 tsp vanilla flavor
A half cup of sugar
1 cup demerara sugar
1/2 C. sunflower oil
half a cup buttermilk
four tbsp cocoa
One tsp common salt
Two tsp bread soda
Method:
Whilst you are preparing the ingredients, set your oven so it preheats to 325 F / 160 C / Gas Mark 3.
Grease a 9″ x 13″ cake tin and put to one side.
Take a mixing bowl andcombine sugars, the oil and the butter.
Add eggs, the vanilla and the buttermilk and give it a good mixing with a wooden spoon.
Using a sieve, sieve the salt, flour, cocoa, cinnamon and soda together.
Add to the mixture.
Stir in the shredded courgettes and mix well.
Put everything into the cake pan and toss the choccie chips over the top.
Put the tin into the pre-heated oven and cook for 3/4 hour.
Allow it to cool a little, and let it cool on a wire rack.
