* Note: fish be supposed to cook for about 10 minutes for every inch of thickness. If you usage chicken breast instead, it will need a total of about 15 minutes cooking time.

3 ripe Roma (egg) tomatoes, diced

Directions:
1. Heat a non-tick frying pay higher than medium high heat. Add bacon and cook, stirring occasionally, for 3-4 minutes or

until brittle. Remove bacon and set aside to

2. Add walnuts to pan and cook on top of medium-high heat for 2-3 minutes or until lightly toasted.

Take away with a slotted spoon to a plate and set aside.

3. Add oil and lime juice to pan. Season using salt and pepper to taste and stir to combine.

  2. Chop the CandiQuik into small pieces and place into a heat resistant bowl.
  3. Pour the heated milk over the CandiQuik chunks and stir until candy is melted.
  4. Stir in the vanilla and peppermint extracts.
  5. Add 8 drops of green food coloring to make green.
  6. Pour drink mixture into glasses, top with whipped cream and nonpareils or sprinkles and serve!

Orange Hallo-Cream

Ingredients:

  • 1/2 gallon milk or soy milk
  • 1 pound vanilla flavored CandiQuik
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange extract
  • Red and yellow food coloring
  • Whipped cream
  • Sprinkles or nonpareils

Instructions:

  1. Heat milk on the stovetop on medium heat for five minutes.
  2. Chop the CandiQuik candy into small pieces and place into a heat resistant bowl.
  3. Pour the heated milk over the CandiQuik chunks and stir until candy is melted.
  4. Stir in vanilla and orange extract.
  5. Add 3 drops of red food coloring and 12 drops of yellow food coloring to make orange.
  6. Pour drink mixture into glasses, top with whipped cream and nonpareils or sprinkles and serve!

Summer is coming and so is the hot weather.  Nobody likes to cook in the heat of summer.  A hot meal on a warm day is almost as unpopular.  It might be that a cool, straightforward to prepare summer soup is just what you need. 

Below are three recipes for soups that can be made in your food processor or blender.  If you’ve got the ingredients on hand, none of them take more than 10 minutes to make.  They’re all delicious, healthful, and actually refreshing on a sunny day.  While the recipes all suggest you use a food processor, you can get excellent results by trying a blender or hand blender too. 

These are all very simple recipes, so don’t be shy to modify them and get a taste that your whole family can enjoy.

Summer Vegetarian soup
This is great tasting soup with a hint of Italy included.  It is super easy to make and really healthy.  It is very good on a hot summer day

An avocado – skin and pit removed naturally
4 Roma tomatoes – they might not be quite juicy enough ( see below )
Basil to taste ( Thai basil is really good in this )
4 tablespoons of extra virgin olive oil

Process
How simple is this soup?  Simply throw everything into your Kenwood and mix until it is smooth.  If you find that it is more of a smoothie than soup, simply add more liquid ( or swap one of the Roma tomatoes for another more tempting variety ).  Pour into bowls, garnish as you wish ( minced chives are nice ) and enjoy. 

wonderful Salsa & Black Bean

This soup is a very simple soup that takes some minutes to prepare.  It can be served hot or cold, but always benefits from being heated. 
approximately 4 servings

INGREDIENTS :
2 normal sized cans of black beans ( any brand is OK, but try for low salt )
1 half cups soup stock ( Just use chicken, beef, or vegetable bullion )
one cup of your favorite salsa ( chunky makes a heartier soup )
1 little spoon cumin ( best to use fresh ground in the soup and you can splatter seeds on top too )
quarter cup of sour cream
1-2 green onions cut fine

Process :
Put the beans, salsa, cumin, and soup stock into a mixer ( a blender is OK too ).  Puree the mix till it is creamy in texture.  Tip the mix into a medium-sized pot and heat on low-medium until it is totally hot.  This allows the flavours to combine.  If you are going to serve it cold, move it to the fridge to cool off till it’s time to eat.  To eat it hot, simply serve into bowls and garnish with the onions and some of the sour cream.

Cabbage Soup Recipe

- 6 large green onions
– 2 green peppers
– 1 or 2 cans of tomatoes
– 3 Carrots
– 1 Container ( 10 oz.  Or so ) Mushrooms
– one bunch of celery
– Half a head of cabbage
– one package Lipton soup mix
– 1 or 2 cubes of bouillon ( optional )
– one 48oz can V8 juice ( optional )
– season well with salt, pepper, parsley, curry, garlic powder, and so on. 

Slice green onions, put in a pot and start cooking.  Cut green pepper stem end off and cut in half, take the seeds and surface out.  Cut the green-pepper into bite size pieces and add to pot.  Take the outer leafs layers off the cabbage, cut into bite size pieces, add to pot.  Clean carrots, cut into bite size pieces, and add to pot.  Cut mushrooms into thick slices, add to pot .If you want a tasty soup, and add a small amount of curry or cayenne pepper now.  You may use beef or chicken bouillon cubes for seasoning.  These have all the salt and tastes you will need.  Use about 12 cups of water, cover and put heat on low.  Let soup cook for ages – 2 hours works very well.  Season well with pepper and salt.

Put the beans, salsa, cumin, and soup stock into a food processor ( a blender is OK too ).  Puree the mix until it is creamy in texture.  Tip the mix into a medium sized pot and heat on low-medium until it is completely hot.  This allows the flavours to combine.  If you are going to serve it cold, move it to the fridge to cool down off till it’s time to eat.  To eat it hot, simply serve into bowls and garnish with the onions and some of the sour cream. 

MANGO SOUP

Mangos are simply divine.  They’re great as a fruit, stirred into drinks, added to salads.  They also make a good cool summer soup which is explained below. 

Ingredients :

1 huge RIPE mango ( it is going to be soft, no soft, to touch )
2 cups chicken soup stock ( make your own or use bullion if you’ve got to )
one TBSP lemon grass ( available in most Asian markets, it seems like long greenish reeds when you purchase it )
one TBSP ginger – Freshly cut is best
Ground chili peppers to taste
one cup yogurt ( two percent plain is best )
2 TBSP cilantro ( chinese parsley ) sliced fine

Process :
Chop mango and put in blender.  Mix temporarily and then put in the ginger, lemon grass, chili and [*FR1] cup of soup stock.  Mix again till everything becomes awfully smooth.  Move the soup into another bowl ( be certain it is large enough ) and mix in first the remainder of the stock, and then the yogurt.  This is best served cold, so put in refrigerator until you are ready for eating.  Then put into bowls and serve with the cilantro as the garnish. 

As the temperature starts to go up give these soups a try.  They’re all simple and will add a new delicious and healthy dimension to your summer diet.

Drain the courgette when serving.

Create the dressing by mixing the vinegar and olive oil. Seasoned it with salt and pepper.

Add the dressing to the courgette, mix them well and serve it with parsley as garnish.
