Salads – Carmel-by-the-Sea Roasted Pear, Goat Cheese, and Candied Pecan Salad

Eat green and stay healthy and lean, that’s my motto. I’ve always loved healthy salads. Ever since my late father’s medical condition precluded his enjoying the greens he also loved, I’ve never taken them for granted and enjoy them even more. My favorite salad mainstays come from Earthbound Farm that began 25-years ago as an organic backyard garden in Carmel Valley, California. Now I live just a few miles away in Carmel, long committed to organic for me and the planet. In 2009 alone, Earthbound’s 33,000 acres avoided the use of over 305,000 pounds of toxic pesticides, 10.3 million pounds of synthetic fertilizers, and conserved 1.6 million gallons of petroleum by avoiding the use of petroleum-based pesticides and fertilizers. With sustainability the goal they use 100% post-consumer recycled PET for plastic salad containers and 99% post-consumer recycled corrugate for shipping cartons.

This is a great recipe for kids. It really does taste like a taffy apple! If you want your kids to eat apples you have to try this salad.

SERVINGS: 10-12

Ingredients:

1 can (20 ounces) crushed pineapple drained with juice reserved

1 egg, lightly beaten

1/2 cup sugar

1 tablespoon all-purpose flour

1 and 1/2 tablespoon cider vinegar

1 (8 ounce) container frozen whipped topping, thawed

4 cups diced unpeeled apples

2 cups lightly salted peanuts, coarsely chopped

4 cups miniature marshmallows (optional)

Directions:

In a large bowl, combine pineapple and marshmallows; cover and refrigerate for several hours.

In a saucepan, combine the egg, sugars, flour, vinegar and reserved pineapple juice; cook and stir until mixture thickens and reaches 160°. Remove from the heat; cool.

Find a good basic dressing that becomes a standard, and you will be able to make it rapidly. Then when you feel like it, experiment. Lemon juice can be a good substitute for vinegar, but it’s so strong that you may want a smaller amount of lemon juice than you would of vinegar. Leftover wine can replace water. Peanut butter can be added, as can yogurt. Use a blender if you wish.

Once you start making your own salad dressings, the flavor combinations are endless. If the olive oil solidifies when you keep the salad dressing in your refrigerator door, just pull out the dressing before you cook a meal, or keep the dressing at room temperature if you are going to use it up fairly soon

Because of our busy lives, it is not always easy to take the time to make dinner at home. For this reason, dining at a restaurant has become as common as going to the movies. The following are a number of etiquette Do’s and Don’ts when dining at a restaurant:

1. Seating: Choose a comfortable table location. Nice locations include next to a window or near an attractive view such as a lovely wall picture. Make sure you are not seated in a high traffic area as this will be a constant distraction

2. Don’t treat the wait staff poorly. They are there to fulfill all of your dining needs. As well, this is how they are earning an income so being rude or obnoxious makes their job unpleasant and stressful. If your server makes a mistake with your order, or your food is not cooked properly, don’t yell at the server. Be courteous and kind when sending food back.

3. Use good manners when you are eating. For instance, chew with your mouth closed and don’t put too much food in your mouth. Don’t use bread for dipping in soups or soaking up sauces. Don’t make loud noises when eating. Don’t talk with a full mouth. Don’t put your elbows on the table. Use utensils when eating. Eat at the same speed as your guests. Don’t pick your teeth or lick your fingers at the table. Don’t cut your food in pieces that are too big. You don’t want to sit there chewing on a big chunk of meat, especially if you are on a date.

With these easy ingredient exchanges, this fresh fruit salad will always be new and flavorful. As the seasons change you can use whatever is available. Some fruit combinations you could try are:

- Spring fruit combination: bananas, blueberries, kiwi
– Summer fruit combination: grapes, pineapple, peaches
– Fall fruit combination: apples, pears, dates
– Winter fruit combination: mango, avocado, oranges

6. Leave a tip of 15% of the total cost of the meal. Waiters and waitresses acquire most of their earnings from tips as there wages are not that high. They also often have to share tips with other staff such as bus staff.

7. When you are ready to pay, let the server know. They don’t always know when diners are ready to pay. If you are on a budget, make sure you order food that you can afford. Remember taxes, tips, and beverages will all be included in the price. If you are the one paying for the meals, don’t announce the cost to your guests.

8. Don’t sit around for hours drinking coffee. This will make it one less table unavailable for other diners. The restaurant will end up losing money.

Dining in a restaurant is much different than dining at home. The way in which we conduct ourselves in a restaurant affects our experience. To make the public dining experience pleasant, it is important for all of us to carry out proper etiquette practices

A Courgette Salad Recipe that is Simple to Make at Home

What you need:

1 1/2 pounds Courgette (washed)
4 tablespoon Olive oil
1/4 teaspoon Hot red pepper
1/4 teaspoon Cumin
1/4 teaspoon Black pepper
Salt
4 tablespoon Italian parsley (chopped)

Dressing for Salad:

1 tablespoon Vinegar
3 tablespoon Olive oil

Description:

Clean the courgette and slice them into 1/4 inches thick.

Put the slices of courgette on a casserole.

Mix it with 2/3 cup of water, 4 tablespoon of Olive Oil, 1/4 teaspoon hot pepper, 1/4 teaspoon Black pepper and 1/4 teaspoon cumin.

Seasoned with salt.

Heat for five minutes or just until it is crispy.

Refrigerate and keep cold.

Drain the courgette when serving.

Create the dressing by mixing the vinegar and olive oil. Seasoned it with salt and pepper.

Add the dressing to the courgette, mix them well and serve it with parsley as garnish.

Serve immediately.
