Two Bennigan’s Restaurant Recipes

Bennigan’s is an Irish-American Grill & Tavern famous for their food and pleasurable, casual atmosphere.  Its menu is loaded with well salads, nice multiplicity of burgers, steak and chicken entrees, sandwiches and desserts.  Whatever you go to one of their locations in the US, Cyprus, El Salvador, Greece or elsewhere, you can enjoy excellent, creative food.  Agree to me share with you two copycat recipes from their wide menu. 

Bennigan’s Onion Soup

1/2 pound Firm white onions — sliced
1/4 cup Butter
2 tablespoons Corn oil
3 tablespoons Flour
1 quart Chicken broth
1 quart Beef broth
8 slices French bread
Swiss cheese — shredded
Parmesan — grated

Saute onions in butter and oil until onions are transparent, but not well browned. When tender, rotate heat to lowest point and sprinkle using flour, stirring vigorously. Pour into Dutch oven and stir in broths.
Heat thoroughly and divide among 8 oven-proof dishes. Mix equal parts of cheese to smooth paste and spread over bread. Glide a slice of bread atop every serving. Place all bowls on oven rack 4″ from broiler heat
and broil until cheese melts. Serve at once. Leftover soup freezes well up to 6 months.

Bennigan’s Hot Bacon Dressing
2 ounces Bacon grease
1/4 pound Red onion, dice fine
2 cups Water
1/2 cup Honey
1/2 cup Red wine vinegar
2 tablespoons Dijon mustard
1 1/2 tablespoons Cornstarch
1 tablespoon Tabasco (optional)

Place the bacon grease inside a saucepan higher than medium-high heat.
Add the onions and saute pending the onions begin to blacken. Even as the onions are carmelizing, inside a mixing bowl place the water, honey, pepper sauce, and red wine vinegar. Using a wire whisk, mix the ingredients well.

Add the cornstarch and beat fit. Following the onions have carmelized, add the Dijon mustard to the onions and stir together using a rubber spatula. Add the water, vinegar, pepper sauce honey and cornstarch to the mustard and onions and mix.
Continue stirring until mix thickens and comes to a boil. Remove from heat and store inside refigerator until needed. To reheat use a
double boiler.

How Long Does It Take To Cook A Steak In The Oven Is It Difficult?

If you’re going to cook your steak in the oven then I would seriously suggest that you broil it. Broiled steak is the best it’s so juicy and tender. That is if you don’t over cook it. To me there really is no other way. Broiled steak is delicious.

Set and pre heat your oven to the broil setting and while you are waiting for your oven to preheat rub your steaks with olive oil, salt and fresh ground pepper. Depending upon the cut of meat you have purchased if it is a less expensive cut of meat you may want to consider using a different seasoning other than salt such as an Adolph’s meat tenderizer. It tends to darken the meat some but it does give it the same flavor as salt. If you have a good cut of beef then a nice kosher salt will do just fine.

Different size steaks will require different broiling times. Depending upon whether you like your steak raw, medium or well done also plays a role in the cooking process. Whether or not you are cooking one steak or many may also make a difference when broiling your steaks in the oven. Do to the number of steaks being broiled cooking times mary vary slightly.

The following are recommended cooking times but keep in mind the different variables that may affect cooking times. If your steak is 3/4 of an inch inch thick and you want your steak medium rare then I would suggest 4-5 minutes per side and if you have a meat thermometer the meat should reach 145 degrees. For a Medium steak 6-7 minutes per side and the meat should reach a temperature of 160 degrees. To deterimine when your meat is ready it is best to use a meat thermometer. Most people don’t have a meat thermometer and tend to cut their steak open to see if it is done. Doing this can cause all of the juices to run out of your meat so it isn’t highly recommended. After the steak is done let it stand for 5 minutes this lets the juices flow through your meat from the top down to the bottom making it juicy and flavorful. Serve with a baked potato and vegetables or your favorite sides. Steaks go great with just about anything depending upon what you have in your kitchen. Steaks and fries are also a good combo.
